Ingredients:
1 lb Organic ground beef
1/3 cup breadcrumbs
1/3 cup water
1/4 cup freshly grated Pecorino Romano cheese
1 medium egg
1/4 cup chopped fresh parsley
1 tsp salt
1/2 tsp ground black pepper
1/4 cup vegetable oil
2 Tbsp Olive oil
2/3 cup chopped red onion
4 garlic cloves, chopped
1/4 cup fresh Basil leaves
1 28oz can whole peeled tomatoes
(8) Small soft rols

Assemble all ingredients

Mix meat, bread crumbs, water, 6 Tbsp cheese, egg, Parsley, salt, and pepper in a large bowl.
Form into (8) 2" meatballs

Heat vegetable oil in a large skillet over medium heat.

Fry meatballs until brown all over
Transfer to a plate, pour off drippings from skillet, and reduce heat to medium - low.

Add olive oil to skillet.
Add onion, garlic and basil.
Saute until onion begins to brown, about 5 minutes.

Add all tomatoes with juices.
Bring to a boil, scraping up all browned bits from skillet
Reduce heat to low, and cover with lid, slightly ajar.
Simmer, stirring occasionally for approx 30 minutes

Have a glass of wine, help the kids with homework, or maybe even enjoy a serenade!..haha

Puree sauce in food processor, and return to pan along with cooked meatballs
Cover with lid and simmer until meatballs are cooked through, approx 20 minutes

Place arugula leaves on bottom of each roll, and top with one meatball.
Drizzle meatballs with remaining sauce and sprinkle with grated cheese
