(6) 15oz cans of white beans - great northern beans, butter beans, cannellini beans, or navy beans
(4) cups of cooked chicken, chopped
(2) medium onions, chopped
(4) medium red peppers, seeded and chopped
(2) 4oz cans diced green chiles
(6) cloves of garlic, minced
(7) cups chicken broth
2 tsp ground cumin
2 tsp salt
2 tsp dried oregano
Prep your ingredients.
Combine all ingredients in a large stock pot, or crock pot slow cooker. Mix thoroughly. Cover and cook on low for 3-5 hours. Makes 12 servings, or more.
Garnish with Parmesan cheese, fresh pepper and country bread, enjoy with our Pinot Noir.
