Oatmeal with Fresh Fruit and Brown Sugar
Asparagus with Gruyere Omelet
Hash Brown Potatoes
Turkey Bacon
LE Blanc White Wine Sangria
 
 
~ INGREDIENTS ~
 
Oatmeal with Fresh Fruit and Brown Sugar
Prepare oatmeal per box instructions
Spoon into small warmed bowls, and top each bowl with 1/2 tablespoon of butter.
Scatter brown sugar over the top and add fresh fruit as desired
 
Asparagus and Gruyere Omelet
5 large eggs
1 tsp fresh lemon juice
Fine sea salt
Ground pepper
1 Tbsp unsalted butter
1 tsp finely snipped chives (optional)
4 Tbsp shredded Gruyere cheese
8 medium asparagus tips, about 2-3 inches long
 
Hash Brown Potatoes
2 large russet potatoes. Peeled, and rinsed
2 Tbsp unsalted butter
Fine sea salt
Fresh ground pepper
 
Turkey Bacon
Prepare bacon per package instructions
 
LE Blanc White Wine Sangria
1 bottle LE Blanc white wine
¼ cup super fine sugar
1 lime, thinly sliced
1 lemon, thinly sliced
1 small Granny Smith apple, cored and thinly sliced
1 small Golden Delicious apple, cored and thinly sliced
1 cup seedless red grapes, sliced in half
1 cup apple juice
1 (12-ounce) can seltzer water
Ice cubes
 
 
Prepare all ingredients
 
 
In a small bowl, separate egg whites (in our case), or whisk together the eggs and yolks, along with water, lemon juice, 1/4 tsp salt, and a pinch of pepper.
 
Place a clean stack of paper towels on the work surface. Using the largest holes of your shredder, shred potatoes into a mound in the center of your towel.
Wrap your paper towels around the ball of potatoes, and wring out to remove as much water as possible.
 In a heavy skillet over medium - high heat, melt 1 Tbsp of the butter.
Add potatoes and spread them quickly to and form an even layer. Season with salt and pepper
Use a spatula and press firmly. Cook on one side for 6-7 minutes until golden brown.
 
 
Parboil your asparagus by submersing in a boiling pot for about 3 minutes.
Drain and rinse with cold water immediately to stop cooking.
Transfer to a paper towel lined plate and set aside
 
Prep Asparagus tips and Gruyere cheese for Omelet
 
Prepare Oatmeal and plate in warms bowls
 
Feed your kids something quick!, so you can get back to cooking the good stuff!
 
Check potatoes and flip as necessary
Prepare a 10" omelet pan by melting butter over a medium -high heat.
Pour the egg mixture into the pan and spread evenly, and continue to cook.
Add asparagus tips and Gruyere cheese to one side of the omelet.
After approx 4 min, and when center of omelet is starting to firm up, flip one side onto the side with the added ingredients.
Let the omelet cook approx 30 more seconds on its side, and plate.
 
Set warmed bowl of oatmeal on plate, and add fresh fruit.
Plate omelet and garnish with extra asparagus tips and Gruyere cheese.
Add hash browns and turkey bacon.
 
Valentine's Day brunch in bed.....

In a large pitcher combine the wine and sugar and stir until the sugar dissolves.
Add remaining ingredients except seltzer and ice cubes. Stir to mix well. 
Chill for at least 1 hour or up to 4 hours. Stir in the seltzer and ice cubes just before serving.
